Super Sunday

Guess what???




Well, I think most of my blog readers already know the news, but McKenna is pregnant...

Kidding of course.  We are having our 4th baby sometime the end of summer or beginning of fall.  I am in the process of finding a new obstetrician since mine moved to New York after McKenna's delivery.  So, any suggestions are welcomed.  Feel free to call or e-mail me with names.  We are surprised and excited to meet our newest and LAST member of the family...Will keep you posted as I find out due date, etc.  Thanks for all your continued support. Please pray that my Interstitial Cystitis continues to be in remission and that I do not have any complications due to the disease.  Hope to update soon with an ultrasound picture and due date.

Happy Birthday Caleb

Well I am very proud to announce that I have blogged for 4 days in a row.  It is a record.  Don't expect it in the future...haha.  We had a lot of fun at Caleb's 4th birthday party.  It is such a blessing to have so many wonderful family members to share the day with us.  I love the pictures of Memere and Pepere.  They are truly treasures to cherish.  Thanks again to everyone who came and spent the day with my family.

Take Me Back Tuesday

Can you believe it? Two posts in two days? For the last two weeks? Un-freaking believable. So, here is my Take Me Back Tuesday picture. I am hoping to get my scanner in working order so I can include some older pictures. I lost many pictures of the boys birth and early days when the old computer crashed. Anyway...here you go. Hope you are all having a wonderful week. We are getting excited about three nights of American Idol. Between the winter olypics, American Idol and Amazing Race, we are becoming quite the TV fanatics. Hey, at least I limit their tv viewing to a few shows a week. Right? I mean it could be worse. We don't let them watch Spongebob, Spiderman or other not-so-good-for-kids shows. I know. I am a prude. But, I would rather my kids not watch shows that have theme songs including, "shut up, I hate you". Seriously, Spongebob sang a song about how he hated another character. I think it is insane that people let their kids watch that crap. I feel like a ninety year old..."when I was little..." Haha. Anyway, so we watch PBS or other family shows in the evening. At least I can rest at night knowing I did all I could. If the kids end up being serial killers, it will be because of something else stupid I did. Kidding...of course.

So here is a picture taken on a family vacation almost 2 years ago.  I miss those cuddly baby, nursing and bonding days.  So relaxing.  If only I could go back in time.

Make it Monday

I bet you thought I forgot about Make it Mondays.  Surprise!  Here is what's for dinner:

Superhero Spinach and Cowboy Steak with Whole Wheat Macaroni

Spinach
Ingredients:
1-2 pounds fresh spinach
3 slices of bacon
1/4-1/2 onion
2 cloves garlic (minced)
1/2 cup stock of choice (we use beef because of Caleb's chicken allergy)
pinch of crushed red pepper flakes

How to:
Cube and cook bacon in a skillet.  Once fat starts to show, add chopped onion in rendered fat.  Saute until translucent.  Add garlic and cook for a few more minutes.  Be careful not to burn the garlic so it doesn't turn bitter.  Add pepper flakes and stir in spinach a handful at a time until they begin to wilt a little.  Add stock in a box and cook until they are completely wilted and ready to eat. (About 10 minutes)  Serves 5

Steak
Ingredients:
2 t-bone steaks
1/2 cup soy sauce
teaspoon of sugar
1/4 cup rice wine vinegar
1/2 teaspoon of chili oil
1 clove minced garlic
1 tablespoon grated onion
1 tablespoon minced ginger
1 tablespoon sesame oil
salt and pepper to taste

How to:
Set t-bone steaks aside.  Combine soy sauce, vinegar, sugar, chili oil, garlic, grated onion, ginger, and sesame oil in a bowl.  Transfer to a gallon size plastic bag.  Add t-bones and preheat grill to medium-medium high heat.  Cook steaks for 3-4 minutes on each size for medium to medium well.  Let it rest for a few minutes and enjoy.

Take Me Back Tuesday

As promised, I am trying to update more frequently.  I have deemed Tuesdays as "Take me Back Tuesdays."  I am going to try to find old pictures to import for your liking.  These could range from old pictures of the family/kids or it could be something related to pop culture.  I really hope I can keep it up.  I am a total slacker these days.  At least I have a hobby that I am somewhat accountable for maintaining.  Well, at least there are a handful of you keeping me  to my word, right?  Maybe one of you?  I don't know.  At least I will have a running record to show my kids when they are older.  So, this weeks Take Me Back Tuesday photo is one of Ms. McKenna.  We took her bowling on Sunday.  These photos were taken about six months apart.  You can see just how much she has grown.  I really wish I didn't have this proof.  I really thought I was going to be one of those lucky ones who time stood still...wishful thinking.

And, by the way...there is not a spellchecker on this program.  So, excuse me, in advance, for my poor spelling.  Since there is no spell checker, I am likely to include many spelling errors.  My ADHD doesn't grant me the patience to cut and past into word in order to spellcheck and then to repaste to the blog, etc., etc.  You will, unfortunately, have to deal with it...hahaha
